Express Tunisian Sandwich

This sandwich is to Tunisia what the ham and butter sandwich is to France.

Instructions

  • 1.   Peel and cut the potatoes in half, then cook them with the eggs in boiling salted water for 15 minutes. Slice the hard-boiled egg and dice the potato.
  • 2.   Cut the tomato and cucumber into small cubes and mix.
  • 3.   Using a long knife, split the bread and generously spread harissa on it.
    Drizzle a few drops of olive oil.
  • 4.   Fill the sandwich with cucumber-tomato salad, tuna, potato and egg, preserved lemon, and olives. Add a chili pepper (optional).
  • 5.   Enjoy.

Ingredients for servings

  • 2 Italian breads
  • 2 tablespoon of harissa
  • 2 teaspoon of olive oil
  • 1 small firm-fleshed potato
  • 1 egg
  • 1 tomato
  • ½ cucumbers
  • 12 olives
  • 1 canned tuna in oil (drained weight)
  • ½ preserved lemons (salty)
  • 2 small pepper in brine (optional)
