Instructions

  • 1.   Beat the 6 eggs and cut the tomato into small cubes, as well as the onion and green peppers (or a green bell pepper if you don't want it spicy).
  • 2.   Add a pinch of salt and pepper, as well as the diced vegetables, and mix everything together. Cook in a pan with a tablespoon of oil.
  • 3.   Stir it like a mashed potato with a wooden spoon until it forms small pieces.

Notes & Suggestions

  • You can serve these eggs with black beans, tortillas, grated cheese, and avocado. For a drink, you can have hibiscus flower infusion or spiced hot chocolate.
