Shakshuka (Fried Eggs with Tomatoes and Feta)

Instructions

  • 1.   Heat the oil in a large skillet. Add the sliced onion and red bell pepper. Cook over medium-low heat until the vegetables are tender. Add the garlic, cumin, paprika, and cayenne pepper (if you like it spicy).
  • 2.   Pour in the tomatoes with their juice. Season with salt and pepper and let simmer until the mixture thickens, about 10 minutes. Add the feta cheese.
  • 3.   Gently crack the eggs into the skillet on top of the tomatoes. Season with salt and pepper.
  • 4.   Cook the eggs for about 7 minutes, covered with a lid, or longer if you prefer them well-done. Sprinkle with fresh coriander and serve with pitas or country bread for dipping.

  • 800 g of canned peeled tomato
  • 140 g of feta
  • 6 eggs
  • 1 pinch of salt and pepper
  • 1 pinch of fresh coriander
  • 3 pita breads
  • 1 pinch of Cayenne pepper
