1. Crack the eggs and separate the whites from the yolks. Pour the egg yolks into a small bowl and whisk them with the milk, flour, a pinch of salt, and baking powder. Add the sugar and whisk again until you have a smooth batter.
2. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the previous mixture using a wooden spoon. Let the batter rest for 30 minutes, covering the bowl with plastic wrap.
3. Grease a pancake pan with a small knob of butter and heat it up. Pour a small ladleful of batter and spread it evenly over the surface. When the edges of the batter dry out (about 1 minute), flip the pancake and cook the other side for about 30 seconds. Remember to grease the pan with a small knob of butter for each pancake!
4. Finally, serve your stack of pancakes with a ton of maple syrup!
