1. Remove the skin from the chorizo, cut it into pieces, and sauté in a pan over medium heat for about 10 minutes, stirring regularly. Place the pieces on paper towels. The goal is to remove as much fat as possible.
2. Meanwhile, prepare the squid. As I mentioned, I watched a tutorial on YouTube before starting (see link below the recipe). I only kept the body, which I cut into slices about 1 cm wide.
3. Peel and slice the garlic.
4. Discard the fat from the pan used to sauté the chorizo but do not wipe it. Add the squid and sauté over high heat for 1 minute, stirring. Add the garlic and parsley, season with salt, and continue cooking for 1 minute, stirring.
5. Remove the squid from the pan, pour in the white wine, and let it evaporate for 1 minute over high heat. Add the crushed tomato and the chorizo pieces. Cover, reduce the heat, and let it simmer for 10 minutes.
6. Add the squid to the mixture, let it simmer for another 2 minutes, and serve.
