Saint-Germain Soup

For a light lunch, I suggest making a Saint-Germain soup. Split peas, bacon bits, carrots, and leeks, a variety of vegetables for a truly delicious recipe.

Instructions

  • 1.   1. Thoroughly clean the vegetables, peel the onion and carrot.
  • 2.   2. Cut them into small pieces.
  • 3.   3. Peel the garlic clove and remove the center germ.
  • 4.   4. Sear the bacon bits in a hot pot or Dutch oven, let them brown for 1 minute over medium heat.
  • 5.   5. Add the carrots, leeks, and onions, stir and let cook over medium heat for 5 minutes.
  • 6.   6. Pour the split peas into the pot, add 2 liters of cold water.
  • 7.   7. Add the bouquet garni and garlic, bring to a boil then simmer for 45 minutes, covered.
  • 8.   8. After 30 minutes of cooking, season lightly.
  • 9.   9. Remove the bouquet garni before blending the soup or passing it through a vegetable mill until smooth.
  • 10.   10. Stir the cream into the Saint-Germain soup, serve hot with a few croutons.
