Instructions

  • 1.   Peel and finely chop the onion. Wash and slice the endives.

    Wash, peel, and cut the potato into small cubes.
  • 2.   In a large pot, melt the butter and sugar together.

    Sauté the onion, endives, and potato for about ten minutes to caramelize them.
  • 3.   Add enough broth to cover the vegetables.

    Let it cook for 10 minutes.
  • 4.   Blend the soup.

    Season with salt and pepper.

    Serve hot.
