Creamy Endive and Potato Soup

Instructions

  • 1.   Peel and slice your onion.

    Peel and cut your potatoes into medium-sized cubes.

    Cut off the base and remove the bitter core of the endives, then slice them.

    In a large pot, sauté your onion in butter until golden brown, then add the potatoes and let them brown for 2 minutes.

    Pour in the milk and cook for 10 minutes, stirring occasionally, then add the endives.
  • 2.   Cover with water, season with salt and pepper, and let it cook for another 15 minutes.

    At the end of cooking, add the fresh cream and curry.

    Blend everything until you get a smooth and homogeneous texture.
  • 3.   Popotte's Tips:

    If your soup still tastes bitter, don't hesitate to add a few drops of lemon, the acidity will neutralize the bitterness.

    For even more flavor, you can also roast your endives in the oven before adding them to the soup.
