Pan-seared tuna steak, mashed pumpkin, and ginger foam

Mashed pumpkin with ginger served with a lightly seared tuna steak.

Instructions

  • 1.   Peel the pumpkin and cut it into small pieces.
    Peel and finely chop the onion, then sweat it in a saucepan with olive oil and a pinch of salt. Add the pumpkin, a sprig of thyme, and water. Season, then let it cook for about twenty minutes.
    Blend everything in a blender or mash the pumpkin while adding the cream. Adjust the seasoning.
  • 2.   Heat a pan with a drizzle of olive oil, then sear the tuna steaks. Season them with fine salt and freshly ground pepper, then flip them and continue cooking for 5 minutes (depending on their thickness).
  • 3.   Peel and grate the ginger.
    Bring the cream and grated ginger to a boil. Let it infuse and season, then strain using an immersion blender. Mix at the surface while incorporating air to make the mixture foamy like a cappuccino.

    Serve the tuna on a flat plate with the ginger foam. Place the mashed pumpkin in a glass.
