Instructions
1. Mix the mayonnaise with the harissa and lemon juice in a bowl, then refrigerate.
2. Beat the eggs in a large shallow plate. Mix the almond powder and parmesan in another plate.
3. Remove the skin from the skate wings, fillet them, and coat them with flour. Dip them in the beaten eggs and then in the almond/parmesan mixture.
4. Heat some oil in a pan and brown the breaded skate wings, about 3-4 minutes on each side (depending on the thickness of the wings), over medium heat.
5. Serve hot, with the harissa sauce, accompanied by a summer tomato salad.
