Skate wings breaded with parmesan, harissa mayonnaise

Instructions

  • 1.   Mix the mayonnaise with the harissa and lemon juice in a bowl, then refrigerate.
  • 2.   Beat the eggs in a large shallow plate. Mix the almond powder and parmesan in another plate.
  • 3.   Remove the skin from the skate wings, fillet them, and coat them with flour. Dip them in the beaten eggs and then in the almond/parmesan mixture.
  • 4.   Heat some oil in a pan and brown the breaded skate wings, about 3-4 minutes on each side (depending on the thickness of the wings), over medium heat.
  • 5.   Serve hot, with the harissa sauce, accompanied by a summer tomato salad.

  • 1 drizzle of oil
  • 4 tablespoon of mayonnaise
  • 1 teaspoon of harissa
