Instructions

  • 1.   Trim the salmon into pieces
  • 2.   Wash, peel, and slice the carrots; peel and slice the onion
  • 3.   In a large pot, place the salmon pieces, carrots, onion, herbs, and cover with water. Bring to a boil and let it cook for 30 minutes, skimming regularly.
  • 4.   Remove the fish to a warm dish, strain the cooking liquid through a sieve, reserving the vegetables. Reduce the liquid slightly. In a bowl, mix the cornstarch with a little liquid and add it to the pot.
  • 5.   Let it reduce, then add the cream and adjust the seasoning. Add the fish and bring to a boil again. Serve hot.

  • 300 g of carrot
  • 1 large yellow onion
  • 2 tablespoon of Cornstarch
  • 25 cl of thick sour cream
  • 1 stalk of fresh thyme
  • 1 bay leaf
  • salt (according to taste)
  • pepper (according to taste)
