1. First step: cook the lentils as they take the longest time (about 25 minutes on medium heat).
In a saucepan, pour your dry lentils (personally, I use about 7 teaspoons but it's up to you to decide the desired quantity), and add three times the volume of water, a few grains of salt, and a little thyme.
Let it cook covered.
2. Second step: While the lentils are cooking, slice 1 onion.
When there are about 12 minutes left for the lentils to cook, start sautéing your onions in a little oil.
Add the bacon when there are about 6 minutes left of cooking time. (adjust according to the power of your stove).
It's ready when everything is nicely browned. You can optionally add a little pepper.
3. Third step: Check the lentils' cooking, if their consistency is to your liking (not crunchy) and after adjusting the seasoning if necessary, drain the lentils and then pour them into your plate.
Add the onions and bacon on top.
4. All that's left is to enjoy.
