Easy Chickpea Salad

A refreshing and easy-to-prepare salad, perfect for a light meal or as a side dish.

Instructions

  • 1.   In a large bowl, mix the chickpeas, onions, corn, tomatoes, basil, and chives. Season with salt and pepper.
  • 2.   In a small saucepan, add the oil, vinegar, honey, garlic, lemon juice, and zest.
  • 3.   Heat over low heat and whisk until the mixture is warm and the garlic cloves sizzle slightly.
  • 4.   Pour the liquid over the chickpeas and mix to coat well.
  • 5.   Cover and refrigerate for at least 30 minutes before serving.

  • 3 cup of chickpeas (canned, drained weight)
  • 4 green onions
  • 150 g of corn
  • 1 tomate cerise en quartiers
  • 3 tablespoon of fresh basil
  • 2 tablespoon of fresh chives
  • 3 tablespoon of olive oil
  • 2 tablespoon of red wine vinegar
  • 1 honey
  • 3 gousse d'ail pressée
  • 1 lime
  • salt (according to taste)
  • pepper (according to taste)
