Scallops with Citrus Butter

A simple and quick holiday recipe to enjoy your guests without spending the evening in the kitchen. Delicate and flavorful scallops are enhanced by a citrus butter.

Instructions

  • 1.   Melt 40g of butter in a small saucepan.
  • 2.   Add the juice of half an orange and half a lemon.
  • 3.   Mix and add 1 tsp of cornstarch to thicken.
  • 4.   Season with salt and pepper, then set aside.
  • 5.   In a skillet, melt a knob of butter over high heat.
  • 6.   Add the scallops and cook for 1 minute on each side.
  • 7.   Season with salt and pepper.
  • 8.   Serve the sauce in small plates, place the scallops on top.
  • 9.   Grate some orange and lemon zest, add a little watercress.
