Japanese potato salad

A creamy salad with good chunks of potato. Full of color, this salad will wonderfully accompany your dishes.

Instructions

  • 1.   Peel the potatoes, then cut them into small pieces and soak them in a microwave-safe bowl of water.
  • 2.   Cut the cucumber into very thin slices and the onion into strips.
  • 3.   Drain the water from the potatoes, leaving about 2-3 tablespoons of water at the bottom of the bowl, then cover and microwave at 600W for 5 minutes.
  • 4.   Cut the carrot and ham into small pieces.
  • 5.   Remove the dish from the microwave. Add the carrots and microwave again at 600W for 2 minutes.
  • 6.   Mix the wasabi and vinegar.
  • 7.   Coarsely mash the potatoes (chunks should remain), add the cucumber, onion, ham, mayonnaise, and the wasabi/vinegar mixture. Season with salt and pepper. It's ready!

  • 150 g of ham cubes
  • 8 tablespoon of mayonnaise
  • 3 tablespoon of rice vinegar
  • 3 teaspoon of wasabi
  • salt (according to taste)
  • pepper (according to taste)
