1. Peel the potatoes, then cut them into small pieces and soak them in a microwave-safe bowl of water.
2. Cut the cucumber into very thin slices and the onion into strips.
3. Drain the water from the potatoes, leaving about 2-3 tablespoons of water at the bottom of the bowl, then cover and microwave at 600W for 5 minutes.
4. Cut the carrot and ham into small pieces.
5. Remove the dish from the microwave. Add the carrots and microwave again at 600W for 2 minutes.
6. Mix the wasabi and vinegar.
7. Coarsely mash the potatoes (chunks should remain), add the cucumber, onion, ham, mayonnaise, and the wasabi/vinegar mixture. Season with salt and pepper. It's ready!
