Instructions

  • 1.   Slice the shallot
  • 2.   Chop the garlic
  • 3.   Heat the olive oil in a saucepan. Add the shallot and cook for 2 minutes. Add the artichoke hearts, potatoes, coriander, vegetable broth, and season. Bring to a boil, then reduce the heat slightly and cook for 20 minutes.
  • 4.   Transfer to a food processor and blend. Add the lemon juice, cooking soy, adjust the seasoning. Return to the saucepan and heat for an additional 5 minutes. Serve hot.

  • 2 potatoes
  • 1 tablespoon of fresh coriander
  • 15 ml of lemon juice
