Creamy Red Cabbage Soup

Add some color to your winter with a red cabbage soup. The combination of red cabbage in a base of potato, garlic, and red onion soup, flavored with Kikkoman Ponzu lemon soy sauce. Serve with dill and a dollop of cream for even more color.

Instructions

  • 1.   &lt;p&gt;Slice the cabbage. Peel and chop the potatoes. Mince the garlic and onion.&lt;/p&gt;
  • 2.   &lt;p&gt;Heat the butter and olive oil in a thick-bottomed pan. Add the onion, garlic, cabbage, and potatoes. Sauté for 3 minutes, stirring frequently. Add the Kikkoman lemon soy sauce and stir. Pour in the vegetable broth, cover, and let cook for about 30 minutes until the vegetables are tender.&lt;/p&gt;
  • 3.   &lt;p&gt;Puree the soup until smooth. Stir in black pepper, apple cider vinegar, and 70 ml of whipped cream. Pour the soup into bowls. Chop the nuts, crush the pepper, and use these two ingredients to garnish with the remaining cream and dill.&lt;/p&gt;

  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 2 tablespoon of soy sauce
  • 1 liter of vegetable broth
  • 1 teaspoon of black pepper
  • 1 teaspoon of apple cider vinegar
  • 100 ml of whipped cream
  • 30 g of walnut
  • ½ teaspoon of pink peppercorn
  • 1 tablespoon of dried dill
  • 400 g of red cabbage
