Cherry Tomato and Shrimp Risotto

Instructions

  • 1.   In a skillet over medium heat, add a generous drizzle of olive oil and add the rice.
  • 2.   When the rice is translucent, add the peeled and sliced shrimp and the sliced tomatoes.

    Quickly sauté.
  • 3.   Add half of the broth.

    Reduce heat to low.
  • 4.   Add the ginger and brown sugar.
  • 5.   Gradually add the remaining broth until the rice is cooked and the consistency is creamy.
  • 6.   Serve sprinkled with cilantro.

  • 500 g of shrimp
  • 50 cl of vegetable broth
  • 1 tablespoon of sunflower oil
  • 1 pinch of ginger powder
  • 2 tablespoon of brown sugar
  • 1 pinch of ground coriander
