Easy Potimarron Soup

Instructions

  • 1.   Wash the potimarron and cut it into cubes.

    If it's organic, there's no need to peel it.

    The skin will soften during cooking.
  • 2.   Peel the onions and slice them.
  • 3.   Bring water (or homemade broth) to a boil in a saucepan, add the pieces of potimarron and onion, lightly salt (you can always adjust later) and let cook for 30 minutes.
  • 4.   Blend the soup.
  • 5.   Pour into bowls with sour cream (optional).

  • 2 onions
  • 1 tablespoon of sour cream
  • salt (according to taste)
  • pepper (according to taste)
