Instructions

  • 1.   Preheat the oven to 180°C (350°F). Melt the sliced red onions in a pan with a knob of butter and salt, then set aside.
  • 2.   Using an upside-down bowl, cut out 3 rounds from each pastry (to avoid waste, you can use the remaining dough by reworking it and making a turnover with jam, for example).
  • 3.   Place each small pastry on one or two baking sheets lined with parchment paper. Spread the red onions over the 6 small pastries, leaving a 2 cm border all around. Place a small handful of well-drained blueberries on top. Fold the edges of each pastry towards the center, creating nice folds, and bake for 20 minutes.
  • 4.   Check the baking and place a piece of brie (about 30 g) on each tartlet, then bake again for 5 to 7 minutes. Sprinkle with fresh thyme, fleur de sel, and pepper, and enjoy.
