1. 1 Prepare the gingerbread. Toast the gingerbread slices in a toaster, then let them harden. Blend to obtain a powder.
2 Prepare the apples. Peel, core, and remove the stem from the apples, then cut them into eighths. Sauté them in a hot pan over medium heat with 20 g of butter for 5 minutes, then add the maple syrup. Let cook for an additional 10 minutes, stirring occasionally. Remove from heat and let cool.
3 Prepare the crumble dough. Preheat the oven to 180°C (350°F). Mix in a bowl by hand the flour, sugar, gingerbread powder, and 100 g of cold butter cut into small pieces (be careful not to overmix, the mixture should become sandy).
4 Bake. Arrange the cooked apples in a gratin dish, sprinkle the crumble on top, and bake for 30 minutes. Enjoy warm.
