1. Preheat the oven to 200°C, top and bottom heat. Cut the Brussels sprouts in half and dice the squash. Chop the onion. Cut the cheese into small cubes.
2. Heat the butter in a large skillet and sauté the spätzli with the onion, squash, and Brussels sprouts for about 5 minutes. Season with nutmeg, salt, and pepper.
3. Transfer everything to a baking dish. Pour cream over it and sprinkle with cheese cubes. Place the dish in the oven and bake for about 25 minutes until golden brown. To taste, add chopped parsley and a little pepper.
