Red cabbage gratin

Instructions

  • 1.   Cut the red cabbage into slices. Plunge the slices into a pot of boiling water and cook for 10 minutes. Drain and set aside.
  • 2.   Peel the onion and garlic. Finely slice both. Sauté them in a skillet with butter for 5 minutes until golden. Add the red cabbage and sauté for another 5 minutes.
  • 3.   In a bowl, whisk the eggs with the cream and flour. Season with salt and pepper.
  • 4.   Place the red cabbage mixture in a gratin dish. Pour the egg mixture over it. Sprinkle with grated cheese.
  • 5.   Bake the gratin for 30 minutes (preheated oven at 200°C). When the cheese is golden brown, remove the dish from the oven and serve immediately.

  • 4 eggs
  • 50 cl of heavy cream
  • 70 g of grated Gruyère cheese
  • 20 g of butter
  • 1 tablespoon of flour
  • salt (according to taste)
