Vegan Chocolate Mousse

Instructions

  • 1.   Whisk the chickpea brine for several minutes until it reaches a consistency similar to stiff egg whites.
    Melt the chocolate in a double boiler.
    Let it cool before incorporating it into the whipped chickpea brine.
    Gently fold to avoid deflating the whipped brine. Once the mixture is smooth, refrigerate to set the mousse (for a few hours).
