Instructions

  • 1.   Bake the eggplants in the oven, cut them in half, gently press the soft flesh to form a hollow and season. Cut the tomatoes and zucchinis into cubes, marinate them with minced onions, pressed garlic, feta cheese, herbs, and spices, then mix and stuff the eggplants with this mixture. Bake in the oven at 160°C for 15 minutes. Mediterranean Stuffed Eggplants.
