Wild rice croquettes with mushrooms, parsley, parmesan, and lamb's lettuce salad

Instructions

  • 1.   Peel and chop the mushrooms.
    Cook the rice according to the package instructions.
    Drain the rice and transfer it to a mixing bowl, add the chopped mushrooms, flour, parsley, parmesan shavings, and season with pepper.
    Mix well and shape into patties in the palm of your hands.
    Heat oil in a skillet and cook the patties for 3 minutes on each side. Place on paper towels to drain.
    Wash and dry the lamb's lettuce.
    Serve everything.
