1. Preheat the oven to 210°C (410°F). Whisk the eggs with the fromage blanc, cream, and flour (reserving a teaspoon to flour the molds). Gradually pour in the milk until a smooth batter is obtained. Season with salt, pepper, add nutmeg and chervil. Stir in the grated surimi (or seafood mix) and the gruyère cheese. Mix well.
2. Grease and lightly flour 4 individual tart molds. Divide the mixture among them. Cut the surimi sticks into slices, lightly press them into the molds. Bake for 20 minutes. Serve hot or cold.
