Summer Flan

Instructions

  • 1.   Cut the tomatoes, bell pepper, red onion, and zucchini into cubes. Slice the garlic.
    In a bowl, crack the eggs. Add the heavy cream and whisk well.
    Add the grated cheese and pepper. Mix again.
    Add the sliced vegetables (you can pre-cook them or leave them raw according to your preference) to the bowl.
    Transfer the mixture to a baking dish or loaf pan. Bake for 45 minutes at 180°C, adding a glass of water to the bottom of the oven to prevent drying out.
    While baking, prepare the basil coulis: in a blender, combine the basil and 6 tablespoons of oil. Blend until smooth. Season with salt and pepper.
    Serve with the basil coulis.
