Swedish-style Eggplant with Chorizo

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
    Cut 4 eggplants Swedish-style (i.e. place chopsticks on each side of the eggplants and slice regularly, stopping the knife at the chopsticks). Add slices of chorizo in the slits (4 slices per eggplant).
    Place them on a baking sheet.
    Drizzle with olive oil and sprinkle with fresh thyme. Season with salt and pepper. Bake for one hour and fifteen minutes.
    Enjoy.
