1. - The marinade:
2. Season the meat with salt and pepper and cut it into cubes for skewers.
3. For the marinade, blend together: green chili pepper, shallots, garlic, ginger, fish sauce, sugar, and lime juice. Marinate the meat for at least 1 hour in the refrigerator.

5. Finely chop the shallot, mint, and coriander.
6. Mix them in a bowl with fish sauce, sugar, lime juice, peanut oil, and soy sauce.

8. Sear the meat over high heat (draining some of the marinade so that it sears well). Add a little marinade at the end of cooking to add flavor.
9. Meanwhile, heat a pot of water with a little salt and oil and cook the tagliatelle.
10. Skewer the pieces of beef, pour some sauce over the tagliatelle, and serve. You can add some mint and coriander for decoration.
