Spinach, mushroom, and olive soup

Instructions

  • 1.   Rinse and trim the spinach.
  • 2.   Peel the 2 cloves of garlic and chop with the parsley.
  • 3.   Heat the oil in a sauté pan, add the spinach and the garlic-parsley mixture, and sauté until the spinach is "melted," about 20 minutes.
  • 4.   Blend with the heavy cream and broth.
  • 5.   Season with salt and pepper.
  • 6.   Chop the black olives with the mushrooms.
  • 7.   Reheat the soup over medium heat and serve in bowls with the chopped mixture.

  • 15 cl of chicken broth
