Instructions
1. Heat a drizzle of olive oil in a skillet over high heat. Add the gnocchi to pan-fry and cook for 2 minutes, stirring. Cover and continue cooking for 3 minutes over low heat.
2. Meanwhile, drain and slice the sun-dried tomatoes into thin strips.
3. Check the gnocchi for doneness. Once nicely browned, set them aside.
4. In the same skillet, heat a drizzle of olive oil over medium heat. Add the grated garlic and sauté for 30 seconds, stirring.
5. Add the sun-dried tomatoes, heavy cream, and grated parmesan. Season with pepper and cook for 2 to 3 minutes, stirring.
6. Add the Herbes de Provence and spinach. Mix well and continue cooking until the spinach is wilted.
7. Add the gnocchi back to the skillet and mix for an additional 1 minute.
8. Serve the Vegetarian Tuscan Gnocchi on a plate. Sprinkle with grated parmesan, if you have any left, and season to taste. It's ready to enjoy!
