1. Preheat the oven to 375°F. Prepare the béchamel sauce. In a saucepan, add the butter. Melt it over low heat. Add the flour and quickly mix with a whisk.
2. Gradually add the milk, stirring, until you get a slightly thick pancake batter-like texture. Season with salt, pepper, and add a little grated nutmeg (optional), then mix. Set aside off the heat.
3. Butter the bottom of an ovenproof dish. Place the dumplings in it, spacing them out to allow them to puff up during cooking.
4. Cover the dumplings with the béchamel sauce, then sprinkle with grated cheese. Bake for 30 minutes at 375°F.
5. Once the dumplings are nicely golden and gratinated, remove the dish from the oven. Serve them on a plate with a green salad seasoned to your liking. It's ready!
