1. Preheat the oven to 180°C (350°F). Peel the carrots, then cut them into tagliatelle-like strips using a peeler.
2. Unroll the puff pastry and spread half of the fresh goat cheese on top.
3. Add the carrot tagliatelle on top. Season with salt, pepper, then drizzle with a little olive oil. Sprinkle the tart with thyme, then bake for 25 to 30 minutes at 180°C (350°F).
4. Once the tart is nicely golden, remove it from the oven. Add the remaining fresh goat cheese in pieces, followed by a drizzle of honey and olive oil. Bake again for 5 minutes at 180°C (350°F).
5. Meanwhile, cut the slices of roast pork into pieces.
6. Once the goat cheese is slightly melted and golden, remove the tart from the oven. Add the pieces of roast pork and season again to your taste. Serve the tart with a green salad seasoned to your taste. It's ready!
