White cheese, leek & bacon tart

Because white cheese tarts can also be made savory, here's proof with this really creamy and delicious tart!

Instructions

  • 1.   Preheat the oven to 210°C (410°F).
  • 2.   Roll out the shortcrust pastry in a tart pan or make one from scratch.
  • 3.   Prick the bottom with a fork and blind bake for 10 minutes.
  • 4.   Meanwhile, finely chop the onion and leeks.
  • 5.   Add the leeks, stir, then add the bacon cubes.
  • 6.   In a sauté pan, melt the butter and sauté the onions for a few minutes.
  • 7.   Cut the bacon into small pieces.
  • 8.   Let it cook on very low heat, stirring often, until the leeks are very tender.
  • 9.   Meanwhile, mix in a bowl the white cheese, heavy cream, and grated emmental cheese.
  • 10.   Once the pastry is partially baked, spread a thin layer of mustard on it.
  • 11.   Pour the well-cooked leeks on top and cover with the white cheese mixture.
  • 12.   Bake for 30 minutes at 200°C (390°F).

  • 300 g of fat-free white cheese
  • 10 cl of light liquid cream
  • 60 g of grated emmental
  • 10 g of butter
  • 1 tablespoon of Dijon mustard
  • salt (according to taste)
  • pepper (according to taste)
