1. Mix the white flour with the milk in a separate bowl
2. In a large mixing bowl, mix the buckwheat flour with the salt and dilute with water (keep some water for later)
3. Whisk for 10 minutes (important: respect the indicated time to achieve the right consistency)
4. Add the mixture of white flour + milk and add the remaining water
5. Let it rest for 30 minutes
6. Make the crepes as thin as possible
7. Grease the pan, pour the batter. As soon as it is golden, flip it with a spatula.
8. Cut a piece of butter and quickly spread it on the surface, fill half of a crepe (grated cheese, ham, mushrooms...)
9. Fold the empty part over the filling
10. Spread butter on the folded surface
11. Flip to brown the other side and spread butter on the surface
12. Enjoy!
13. Note: Cook a fried egg separately and place it on top of the crepe at the end of cooking.
