Breton buckwheat crepes

Instructions

  • 1.   Mix the white flour with the milk in a separate bowl
  • 2.   In a large mixing bowl, mix the buckwheat flour with the salt and dilute with water (keep some water for later)
  • 3.   Whisk for 10 minutes (important: respect the indicated time to achieve the right consistency)
  • 4.   Add the mixture of white flour + milk and add the remaining water
  • 5.   Let it rest for 30 minutes
  • 6.   Make the crepes as thin as possible
  • 7.   Grease the pan, pour the batter. As soon as it is golden, flip it with a spatula.
  • 8.   Cut a piece of butter and quickly spread it on the surface, fill half of a crepe (grated cheese, ham, mushrooms...)
  • 9.   Fold the empty part over the filling
  • 10.   Spread butter on the folded surface
  • 11.   Flip to brown the other side and spread butter on the surface
  • 12.   Enjoy!
  • 13.   Note: Cook a fried egg separately and place it on top of the crepe at the end of cooking.

  • 20 g of salt
  • 150 ml of milk
  • 1000 ml of water
  • 15 slices of ham
  • 600 g of button mushroom
  • 500 g of grated cheese
  • 15 eggs
  • 1 teaspoon of butter
