Baked Shakshuka with Eggs and Red Beans

Instructions

  • 1.   Peel and slice the onions into thin strips. Cut the peeled tomatoes into pieces.
  • 2.   In a frying pan, sauté the onions in a drizzle of olive oil until golden, then add the tomatoes, chili spices, oregano, salt, and freshly ground pepper.
  • 3.   In a shared casserole dish or individual casseroles, spread the red beans, then add the onion and tomato mixture. Crack the eggs on top. Sprinkle with Parmesan cheese and bake for 15 minutes. Enjoy right out of the oven.

  • 6 canned peeled tomatoes
  • 2 teaspoon of chili spices
  • 2 sprig of fresh coriander
  • 400 g of canned red bean
  • 4 eggs
  • 2 tablespoon of grated parmesan
  • 1 drizzle of olive oil
