1. Place the potatoes in a pot of boiling water, keeping the skin on, and let cook for 20 minutes. A knife blade should easily go through the potatoes.
2. Preheat the oven to 200°C (392°F).
3. Cut the comté cheese into sticks. Set aside.
4. Using an apple corer, make a hole in the middle of each potato, lengthwise.
5. Take a stick of comté cheese and wrap a slice of bacon around it, then insert it into the potato.
6. Place on a baking sheet lined with parchment paper, sprinkle with fleur de sel and thyme, and bake for 10 minutes.
