Fresh apricot tiramisu

Easy to make, no-bake, and very flavorful, this recipe for fresh apricot tiramisu is a dessert full of sweetness.

Instructions

  • 1.   Wash, dry, then cut the apricots in half to pit them. Cut them into small cubes or slices.
  • 2.   In a bowl, separate the egg whites from the yolks. Mix the egg yolks with the sugar and mascarpone until you get a smooth and homogeneous mixture. Set aside.
  • 3.   Beat the egg whites until stiff peaks form with a pinch of salt. Very gently fold the egg whites into the previous mixture using a flexible spatula. Chill.
  • 4.   Mix cold coffee and marsala in a shallow dish. Quickly dip the ladyfinger biscuits in this mixture. Line the bottom of the glasses with a layer of soaked biscuits. Cover with apricot pieces. Add a few mint leaves (chopped or whole).
  • 5.   Top with a thick layer of mascarpone cream. Chill for a minimum of 3 hours.
  • 6.   Dust the tiramisu with unsweetened cocoa powder just before serving.

  • 200 g of ladyfinger
  • 2 tablespoon of cocoa powder
  • 6 leaf of fresh mint
  • 1 cup of cold coffee
  • 1 teaspoon of marsala
