1. Wash, dry, then cut the apricots in half to pit them. Cut them into small cubes or slices.
2. In a bowl, separate the egg whites from the yolks. Mix the egg yolks with the sugar and mascarpone until you get a smooth and homogeneous mixture. Set aside.
3. Beat the egg whites until stiff peaks form with a pinch of salt. Very gently fold the egg whites into the previous mixture using a flexible spatula. Chill.
4. Mix cold coffee and marsala in a shallow dish. Quickly dip the ladyfinger biscuits in this mixture. Line the bottom of the glasses with a layer of soaked biscuits. Cover with apricot pieces. Add a few mint leaves (chopped or whole).
5. Top with a thick layer of mascarpone cream. Chill for a minimum of 3 hours.
6. Dust the tiramisu with unsweetened cocoa powder just before serving.
