Monkfish with Vegetables

Instructions

  • 1.   Grease a casserole dish, then arrange the sliced vegetables (leeks, celery, carrots, and the bouquet garni) in it.
  • 2.   Place the monkfish on top, and pour in the 50 cl of white wine and 50 cl of water; season.
  • 3.   Bring to a boil, then let simmer for 10 minutes.
  • 4.   Remove the fish, thicken the sauce with the cream, add a dash of lemon and parsley.
  • 5.   Serve the fish with the sauce and the vegetables.
