Instructions

  • 1.   Line a large buttered and floured tart pan with shortcrust pastry, prick the pastry with a fork, place stones or pits on it, bake at 210°C for 20 minutes.
  • 2.   Filling: squeeze the lemon, wash the figs, dry them, cut them in half lengthwise. Place them in a shallow dish, sprinkle with caster sugar, drizzle with lemon juice.
  • 3.   Marinate for 30 minutes, turning occasionally.
  • 4.   Let the pre-cooked pastry cool for 10 minutes. Spread the apricot jam, place the figs on top, cut side down. Sprinkle with icing sugar, bake at 230°C for 7 to 8 minutes to lightly caramelize the tops of the figs.
