Instructions

  • 1.   Preheat your oven to 180°C (350°F).
  • 2.   Thaw the cod for 30 minutes in the refrigerator.
  • 3.   Meanwhile, cook the frozen peas and fava beans in boiling salted water for about 3 minutes. Cool with ice. Drain and set aside.
  • 4.   Blend the peas to obtain a smooth cream.
  • 5.   Sauté the fava beans and pearl onions with shallots and parsley, then add the veal stock.
  • 6.   Blend the pistachios and add the softened butter and flour. Mix everything with your fingers.
  • 7.   In an ovenproof dish, place the cod fillets, season with salt, pepper, and drizzle with olive oil, then cover the fillets with the pistachio crust.
  • 8.   Bake the dish for about 15 to 20 minutes, until the fish is cooked.
  • 9.   Prepare the lemon mint vinaigrette: in a bowl, combine olive oil, chopped mint leaves, lemon juice, and Espelette pepper. Season with salt and pepper.
  • 10.   Serve the cod with pistachio crust on top of the fava beans and pearl onions, and drizzle with the lemon mint vinaigrette and olive oil when plating.

  • 100 g of small onion
  • 150 g of veal stock
  • 2 tablespoon of flat-leaf parsley
  • 2 tablespoon of shallot
  • 100 g of pistachio
  • 50 g of butter
  • 50 g of flour
  • 1 bunch of fresh mint
  • 1 untreated lemon
  • 2 tablespoon of olive oil
  • 1 pinch of Espelette pepper
