Instructions

  • 1.   In a saucepan, heat 40 cl of water and unsweetened condensed milk while stirring.
  • 2.   Add the rice and cinnamon. Cook covered for 20 minutes, stirring every 5 minutes.
  • 3.   When the rice is tender, add the sugar. Stir and let it cool.
  • 4.   When the sombi is well chilled, add the coconut cream for extra creaminess.
  • 5.   In a sauté pan, melt the butter until it turns nutty. Add the diced mango and vanilla sugar. Stir for 5 minutes and set aside.
  • 6.   Defrost the coulis in the microwave for 2 minutes and let it cool.
  • 7.   Assemble: in a glass, layer the mango pieces, the sombi (rice pudding), and the mango-passion fruit coulis. Garnish with a mint leaf.

  • 200 g of round rice
  • 200 ml of coconut cream
  • 20 g of powdered sugar
  • 25 g of butter
  • 4 leaf of fresh mint
