Chorizo Stuffed Pattypan Squash

Pattypan squash, also known as Spanish artichoke for its delicate taste, is a vegetable from the cucurbit family, with a flying saucer shape. Once neglected, this ancient vegetable is making a comeback in the market. Prepare the pattypan squash with this chorizo recipe to enhance its artichoke and hazelnut flavor. By simmering, the squash will absorb the spices from the chorizo. Potatoes will add a touch of sweetness.

Instructions

  • 1.   Wash the vegetables. Cut the pattypan squash, remove the seeds and peel it, then cut it into pieces. Peel and cut the potatoes into pieces. Peel the onion and garlic clove, then slice them.
  • 2.   Melt the butter in a sauté pan. When the butter is melted, add the sliced onion and garlic. Sauté them until they become translucent. Then add the pieces of pattypan squash and potatoes and sauté them for 25 minutes, stirring regularly. Add a little water if they stick.
  • 3.   Meanwhile, slice the chorizo. When the pieces of pattypan squash and potatoes are tender and golden, add the chorizo slices to the sauté pan and cook for another ten minutes, stirring regularly.
  • 4.   At the end of cooking, sprinkle dried thyme and season with pepper to taste. Mix well and serve.
