Lamb chops and green vegetable mix

Instructions

  • 1.   Clean the asparagus, remove the tough part at the base, and cut them into pieces. Blanch them with the peas and snow peas for 3 to 4 minutes in salted water. Drain.
  • 2.   Heat a grill pan over high heat. Season the lamb chops with salt and pepper and grill and brown them on both sides (approximately 6 to 8 minutes depending on the thickness).
  • 3.   Heat a drizzle of olive oil in a pan and sauté the green vegetables for a few minutes. Add the lemon juice and mint. Season with salt and pepper.
  • 4.   Arrange the vegetables on a plate with the chops. Serve immediately.
  • 5.   Preferably buy lamb chops with bone and a little fat. This is what gives flavor to the meat and makes it juicy.
