    Preheat the oven to 220°C (200°C fan-forced).
Heat a drizzle of olive oil in a pan over medium-high heat. Sauté ½ packet of Mexican spices per person (it's spicy! Adjust to your taste) for 1 minute.
Add the beef and cook for 3 minutes, breaking it up with the back of a spatula.
Add the tomato pulp, half of the drained corn, and grated cheddar. Simmer for 4-5 minutes.
  • 2.   Meanwhile, make a vinaigrette by mixing mustard and red wine vinegar with a drizzle of olive oil in a salad bowl.
    Season with salt and pepper.
  • 3.   Place the tortillas on a baking sheet lined with parchment paper. Drizzle with olive oil, then spread the beef sauce on top and sprinkle with the remaining grated cheddar.
Bake for 4-6 minutes, or until golden and the cheese is melted.
  • 4.   Just before serving, add the salad, remaining corn, salt, and pepper to the salad bowl. Gently toss to combine.
