Low GI Crustless Broccoli and Smoked Salmon Quiche

Without a crust to save time and for a lighter meal ????. Oat bran serves as flour and binder with a GI of only 15. I used a small mold to have a nice height, it looks more appetizing in my opinion ????.

Instructions

  • 1.   Cook the broccoli florets in water or steam.
  • 2.   Mix almond powder and oat bran. Add the eggs. Pour in the cream, parmesan, and Skyr and mix well with a whisk. Season with salt and pepper.
  • 3.   In a 18 cm diameter mold or alternatively a loaf pan, place the broccoli and smoked salmon pieces, then pour in the mixture. Bake for 25 to 30 minutes at 190°C.
  • 4.   Wait a little before unmolding.

Notes & Suggestions

  • You can replace the broccoli with leeks or cauliflower. And the smoked salmon with tuna or smoked tofu.

  • 3 eggs
  • 40 g of oat bran
  • 20 g of almond powder
  • 20 cl of plant-based cream
  • 100 g of skyr
  • 4 slice of smoked salmon
  • 30 g of parmesan (optional)
  • salt (according to taste)
  • pepper (according to taste)
