Aromatic Chicken Noodle Salad with Sesame Oil & Raw Vegetables

Thai basil, mainly found in Southeast Asia, is nothing like its classic basil cousin! With its lemony and spicy flavors, it is more similar to tarragon and anise. In this chicken and noodle salad, it brings freshness and character to your dish in the form of a soy sauce and lemon vinaigrette.

Instructions

  • 1.   Be sure to follow the quantities indicated on the left to prepare your recipe!
    Bring a pot of salted water to a boil. Cook 50g of noodles per person for 2-3 minutes. Drain and rinse them with cold water to prevent sticking. Drain them again.
    Meanwhile, finely chop the garlic and grate the ginger (it's spicy! Adjust according to your taste).
    Thoroughly wash the lemon and grate the zest with a fine grater, then cut it into quarters.
    Pluck and chop the coriander and Thai basil.
  • 2.   Heat a drizzle of sunflower oil in a pan over medium-high heat. Sauté the chicken with half of the ginger and garlic for 2-4 minutes on each side. Season with salt and pepper.
    Deglaze with white balsamic vinegar (or rice vinegar if you have it).
    Slice the cooked chicken.
    TIP: Let the chicken cool for 3-4 minutes if you want to enjoy your salad cold.
  • 3.   Meanwhile, in a salad bowl, mix together, per person: 10ml of sesame oil and 10ml of soy sauce with the remaining ginger.
    Add the lemon zest, a few drops of its juice (according to your taste), the coriander, Thai basil, and 1 tablespoon of water per person.
    TIP: You can also add ½ teaspoon of honey per person to the vinaigrette, as well as sunflower oil to give it more consistency. However, this will increase the total calorie count.
  • 4.   Just before serving, add the noodles, salad, cabbage-carrot mixture, and chicken to the salad bowl. Season with pepper and mix.
    Serve the salad on plates.
    TIP: Consume this salad immediately or reserve the vinaigrette if you are not eating it right away, as the noodles will quickly absorb the sauce.

  • 1 carrot
  • 1 tablespoon of sunflower oil
  • 1 teaspoon of white balsamic vinegar
  • ½ red cabbages
  • ½ white cabbages
