1. Start by making the caramelized onion jam. Peel the onions and roughly chop them. Cook them with a knob of butter over medium-high heat. Once translucent, add the sugar and let it lightly caramelize. Then add the vinegar, salt, pepper, and cook until the onions are completely melted. They should have a deep reddish color. Let it cool down afterwards.
2. Wash and dry your salad. Arrange it on a plate or directly on individual plates.
3. Rinse the figs, remove the stems, and cut them into pieces.
4. Place some caramelized onion jam on the salad, then add pieces of Gorgonzola, figs, and walnut kernels.
5. Finish by seasoning with salt, pepper, vinegar, and walnut oil.
