Instructions
1. Start by preparing the dressing by mixing all the ingredients. Stir well and set aside. Then, cook the lentils in three cups of salted water. Bring to a boil for 15-20 minutes or until the lentils are tender. Once cooked, place the lentils in a colander and let them drain and cool.
2. Cut and place all the vegetables in a large salad bowl and pour the dressing on top. Add the lentils and mix to coat everything well. Taste and add more salt, pepper, or lemon juice if necessary. Finally, sprinkle with crumbled feta and serve cold.
